Serves 4 Total Cost = £3.63 (the olive oil, garlic and chilli flakes can be used for numerous dishes)
5tbsp extra virgin olive oil
½ tsp chilli flakes
2 garlic cloves
6 anchovy fillets
2 x tins chopped tomatoes
150g pitted black olives
1 tbsp capers
1. Gently fry the garlic, chilli and anchovy fillets in the olive oil until the anchovies have dissolved.
2. Add the tomatoes, olives and capers and cook over a medium heat for 15 to 20 minutes.
3. Cook the linguine until al dente, drain and add to the pan with the sauce. Toss the pasta with the sauce and heat gently for a couple of minutes.
