Green Lentil and Butternut Squash Curry

Slightly more than a fiver but this one will feed up to 8 people and the best bit is once you get the essential ingredients you can make it a 2nd time for around £2.50, what’s more its vegetarian friendly!

1 cup of green lentils, washed and rinsed 
500ml of passata
200ml of Vegetable stock
1 large sweet onion, finely chopped 
4 cloves of garlic, crushed
1 tablespoon of ground ginger
1 tsp of garam masala
1 tsp of cumin
1 tsp of coriander
2 tsp of chilli powder
1 tablespoon of curry powder 
1/2 large butternut squash, cubed 

Preheat oven to 200 degrees centigrade
Add butternut squash to an oven proof dish, pour a little bit of oil over the top and roast in the oven till softened and golden (roughly 30 minutes).
Put one spoon full of oil into large saucepan fry the onion, garlic and ginger, until softened.
Add all the spices to a bowl (or mortar and pestle if your fancy), along with a little bit of water and mix together.
Add spices to onion, garlic and ginger mixture and stir to even coat.
Add lentils, stock and passata, bring to the boil and reduce heat, cover and simmer for approx 1 hour.
Add in the roasted butternut squash about 10 mins prior to serving time.

Roasted Butternut squash and green lentil curry DONE!!
