Chicken and Vegetable Pasta Bake with Cheesy Garlic Ciabatta by Michael G

Ingredients

1 bag of pasta (500g)
2 chicken breasts
1 onion
1 pepper (get a red one – it looks better at the end)
1 clove of garlic
1 small bag of mushrooms
1 jar of tomato and basil sauce (400g) – or something similar
1 small block of cheddar cheese
1 small ciabatta roll

Method
Boil the pasta and cook the chicken breasts (cut the chicken into cubes when cooked)
Cook the onion, pepper & mushrooms in a little oil (leave a little to the side)
Put the chicken, pasta and vegetables in an oven dish and then pour in the sauce
Mix in a little grated cheese and then chuck that bad boy into the oven for about 40 minutes at a moderate heat

Meanwhile….. 
Make up some garlic butter (crush a couple of cloves into some butter) & spread generously over the ciabatta bread
Sprinkle the remaining cheese over the bread & then throw on the remaining mushroom, onion and pepper 
Bake in the oven for about 15 minutes

NB. Make it vegetarian by replacing the chicken with aubergine!
